Perfect Combinations

Ever since we changed our cookie and brownie recipes to use oat flour instead of wheat, Allison has been a little bit obsessed with her own cookies. For a long time it was the Mint Chocolate Chip Cookies that were her almost daily habit, but recently, her preference has leaned towards Double Chocolate Chunk. Last week I found her enjoying this little snack and we decided that the Double Chocolate Chunk Cookie with a glass of So Delicious Coconut Milk was such a perfect combination we just had to document it! (Allison prefers the Unsweetened flavor, but I usually go for the Original or the Vanilla.)

That little snap shot got me thinking about other perfect dessert combinations and here are some of my favorites (more photos to come, I promise):

• Peppermint Hot Cocoa with a Classic Chocolate Chip Cookie to dip in it.

• Decaf Vanilla Nut organic coffee with So Delicious French Vanilla Coconut Milk Creamer and a Pecan Brownie on the side.

Soft Peanut Butter Cookies warmed in a toaster oven with chocolate chips melted on top.

• Rooibos Earl Grey fair-trade tea made with 4-5 drops of stevia and a splash of rice milk and… never mind… that drink is so delicious it’s its own perfect combination.

Summertime Menu Ideas

As we move out of winter into warmer weather, for many of us our tastes change. Those rich, warm dishes that we crave in the colder months get moved aside in favor of fresher, lighter fare. But, just because you’re craving salads and sandwiches doesn’t mean that some classic comfort foods can’t make an appearance on your table. For some great summer sandwich ideas check out Allison’s Grilled Tempeh Reubens, Tuna(less) Salad, and of course, vegan BLTs with Smoky Fried Tofu Bacon as featured in the current issue of VegNews Magazine and coming up on our Monday Yumday post next week!
Other summertime favorites include All-American Potato Salad, vegan barbecue, and of course Allison’s famous Mac ‘n’ Cheese, which is an all-time favorite any time of year.
As for warm-weather desserts, you know we always have you covered in that department. Some of our not-to-be-missed summertime flavors include zesty Coconut Key Lime Cookies, refreshing Mint Chocolate Chip Cookies, and soft Peanut Butter Cookies (coming in July), as well as Sour Cherry and Apple Pie fudge flavors!

The Flavors of Summer

It feels like spring here in Northern California, which makes me start looking forward to long days of summer fun in the sun. For all you cookie monsters out there, here’s a little sneak preview of some of our gourmet cookie flavors coming up in the summer months.

May kicks off the summer season with Coconut Key Lime cookies. There’s nothing like mild coconut and tangy lime to whisk you away to an imaginary tropical paradise. June’s gourmet cookies will be Mint Chocolate Chip, a perfectly sweet refreshing flavor for the hot days of summer. July goes classic with chewy peanut butter cookies just like the ones mother used to make. Here’s to planning ahead… we have your summer sweet tooth all taken care of.

Storing your Cookies and Brownies

We often get questions from customers on how to store their vegan cookies and vegan brownies. Here’s a quick how-to:
Our vegan cookies can be stored in your cookie jar (any airtight container or their original packaging) for up to one week. They can also be frozen, in the same container or packaging, for up to three months. When you’re ready to eat them, simply thaw your cookies at room temperature or warm them quickly in a toaster oven. This works especially well with our chocolate chip cookie flavors for that hot-from-the-oven, melted chocolate experience.

Our vegan brownies can also be stored in their original packaging for up to one week. Or, cut them into your desired piece sizes and freeze them in their original packaging or other airtight container for up to three months. Brownies can be thawed at room temperature or warmed briefly in a toaster oven.
